Arnold Sandwich Thins Two Ways

 

This morning my mom and I enjoyed a wonderful 4.5 mile walk through around Wilmington Island. We enjoyed marsh views, early morning animal sightings, and even waved to Paula Deen as we passed her house.

By 9am our stomachs were growling for a warm, healthy, and filling breakfast. I knew I wanted to make something I can’t make at the office on a daily basis. I scoured my parents fridge and found the following ingredients:

  • Eggland’s Best Eggs
  • Laughing Cow Light Mozzarella cheese
  • Arnold Sandwich Thins
  • Kraft 2% slices
  • Tomatoes

Isn’t my new placemat cute? I found 3 of these at Target in different fun, bright colors like aqua and yellow! IMG_0494I had a great idea for breakfast and quickly started working on a warm breakfast delight for my the two of us.

IMG_0493Instead of settling for an Arnold Sandwich thin one way, I used each individual thin as a base for a different type of breakfast sandwich.

The warm one included 2 egg whites, 1 egg, salt & pepper, Garlic Gold, and melted Kraft single atop an Arnold Thin.   

IMG_0490The second thin included a thin spread of Laughing Cow cheese and tomato slices.

IMG_0489These were exactly what I was craving and my mom loved the combination too!

Pizza and A Double Feature

 

Sometimes the perfect evening is at home, curled up in comfies, enjoying a glass of wine, pizza, and a movie- or two.

We ventured out to Papa Murphy’s for two made to order pizzas which were both delicious. I loved my veggie supreme which included every vegetable they had available, tomato sauce, and cheese while Bo and my parents enjoyed the thin Tuscan pizza.

The pizza and wine were the highlights of the evening while the double feature flopped. The first movie, Unstoppable, was entertaining but not wonderful. It seemed like a tired story line and below Denzel’s level. The second move, You Again, was turned off after only 20 minutes. It could have been a cute, light movie but it was too silly for our taste. Instead, I ended up watching American Idol with my parents. Would you believe that it was the first time I’ve ever watched an entire episode. I’m embarrassed to say that I really enjoyed it!

Two by the Sea…

I hope you all have enjoyed the guest posts this weekend by Ali, Katherine, and Sara! I can’t thank them enough for coming through when I needed them. My time at home has been all about family, celebrating my grandmother’s life, and helping with all that needs to be done.

This morning, before our family brunch, my mom and I enjoyed an hour of solitude by the sea.

Tybee Beach is Savannah’s hometown beach, only 10 short minutes from my parents’ home. Over the past few years, Tybee has developed a great deal. There are now wonderful restaurants, bed and breakfast inns, and most of the beach has been refurbished.

Mom was ready to cross the dunes onto the beach for our walk!

IMG_0454We always enjoy our walks on the beach together. We spend some time talking, spreading our toes in the sand, and collecting shells.

The weather was perfect this morning; though it was quite cool and windy on the beach. We were both bundled in fleeces and jeans, but still enjoyed the bright sunshine.

See our seagull friends? They were there in flocks, begging for food and attention. I learned as a child, that I will NEVER surprise the seagulls. I’d spend hours chasing them, hoping to touch just one.

The white sand was decorated by aged driftwood and long lost palm trees.

This sand shark was very popular with the children. I saved you all from the other side which unfortunately was not a pleasant site.

Unfortunately, our photo session did not go as well when dealing with animate objects.

This is an adorable picture of my mom! Not sure what I was doing. 🙂
