Low Fat Chocolate Chip Pumpkin Bread

Even though the weather is still hot and humid, I found myself craving all things Fall this week. As soon as we said farewell to Summer during Labor Day weekend, I started to dream of pumpkin bread, sweaters and tall boots, cool morning runs, and chai tea. This inspired me to spend time in the kitchen testing a few recipes. In 2012 I created a low-fat pumpkin bread with chocolate and peanut butter chips. Since then, during the Fall this recipe is always my top post as readers love the flavor combination. Yesterday, I whipped up this classic recipe, making a few changes which resulted in improved texture and flavor than the original.

This healthier pumpkin bread is perfect to enjoy before workouts or as an afternoon snack. After it cools, I slice the loaf into 12 slices and store in individual Ziploc bags so I can easily grab it and go. I hope you enjoy this updated version as much as I have this weekend.

Low Fat Pumpkin Bread with Chocolate and Peanut Butter Chips

Serves 12

Ingredients:

  • Granulated sugar, 1 cup
  • Pumpkin, canned 1 cup
  • 1/4 cup coconut oil
  • Fage 0% Greek Yogurt or your favorite Greek Yogurt, 6 ounces 
  • egg white, fresh, 2 large
  • 1 tbsp vanilla extract
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp nutmeg
  • Organic All-Purpose White Flour, 1 cup
  • Whole Wheat Flour, 1/4 cup
  • Salt, 1 1/2 teaspoon
  • Baking Soda 1/2 teaspoon
  • Semi-Sweet Chocolate Chips, 1/4 cup

Preparation

  • Preheat oven to 350*
  • Combine first 6 ingredients in a large bowl, stirring well with a whisk, ensuring that you don’t over mix.
  • In a medium bowl, combine flour, cinnamon, cloves, nutmeg, salt, and baking soda. Add flour mixture to pumpkin mixture, stirring just until moist. Stir in chocolate chips.
  • Spoon batter into a loaf pan coated with cooking spray. Bake for 45 minutes or until a wooden pick inserted in the center comes out clean. Cool completely on a wire rack.

Prioritizing Life

Seven years ago, when I started this blog, I never knew the way it would evolve and grow. It started as a place to share my journey towards running my first marathon and then grew into a health and wellness blog. My blog isn’t the only thing to grow and change over time. I’ve changed as a person. For years, I prioritized the blog over other aspects of my life – often without realizing it. There were times when I would sign up for press trips and blog conferences without considering the impact this travel would have on the rest of my life.  As I was working to grow my blog and reach new audiences, I would say yes to every opportunity even if it wasn’t relevant or convenient.

As I’ve aged, I’ve realized that I want and need to prioritize life first and my blog second.  

This isn’t to say that I am going to stop blogging anytime soon or stop sharing my journey towards a healthy, happier life. Instead, I want you guys to know that I will continue to share the tough bumps in the road with you as well as the positive highlights. I have also found that over the past few months, as I’ve said no to the opportunities that don’t feel right or make sense, I’ve been able to say yes to ones that excite me and reignite my passion for this space. I feel at the age of 32 I have far more to offer you all than I did at 25.  I was young and naive back then.  Living a healthy life doesn’t get easier as one gets older. Instead, as other priorities and demands are continuously added to my plate I find it harder and more challenging.

I’ve started making changes, beginning with my calendar, that are already benefiting me and those around me. 

During our drive home from Lake Placid on Sunday, I spent 30 minutes reviewing my calendar for September and October. I used the color coding system to organize my commitments: work, family friends, workouts and blog. I realized that unfortunately, September was a month of over-commitment on the blog front due to multiple opportunities. The change of season as well as New York City Fashion Week often bring incredible events. While I’m always honored to be invited to them, it is difficult to balance these in addition to my professional and personal life. As you guys know, I have a career with Procter & Gamble that I love. My role just increased in responsibility, which means the next few months are going to be exciting but demanding.  Instead of trying to squeeze things in, I started making tough decisions.

One of the biggest things I decided to remove was something that was looming on my calendar and causing guilt – Montreal Rock’n’Roll 10k. 

Due to work commitments for both Bo and me, our three day weekend to Montreal to eat, tour and run our way through the city slowly started shrinking. As of last week, it became a 30-hour trip that would be an expensive proposition considering flights and hotel costs. I felt guilty emailing the Run Rock’N’Roll team since I am a Rock’n’Blog ambassador. Luckily, a few friends and family members reminded me that at the core my blog is about maintaining a healthier, happier lifestyle and I should pursue things that match this goal. While it was a tough email to write, the moment I pushed enter I felt a weight lift off my shoulders.

This was intended to be a virtual coffee date but instead grew into a long post about one thing – change. 

Sometimes we need to take a step back and reflect on where we have been, where we are and most importantly where we want to go.  Over the next few weeks and months, you will start to see my vision for this blog come to life. I hope you’ll enjoy the journey and continue reading.

Labor Day Weekend in Upstate New York

I hope you guys had a wonderful, long Labor Day weekend. Am I the only one who feels like today has been a heck of a busy day and feels more like a Monday than a Tuesday? I’ve been going non-stop since the alarm went off at 6 AM! The good news is that there are only three more work days until the weekend!   I’m also very thankful that I spent the past three days relaxing and disconnecting. I disconnected from email and work 100% this weekend and having those days to recover have allowed me to focus and start the week strong.

Before this weekend, neither of us had spent time in upstate New York and we are now in love with the area. The region offers so many options, regardless your interest. Unlike Manchester, Vermont, where my family has a home, this area offers water sports – something Bo and I both enjoy. That combined with the adorable town, cool weather and hiking made it a great weekend getaway.  If you live in the area, I highly recommend you head to the Lake Placid area for a long weekend!

Here are a few highlights from the weekend:

  • We hiked 9.8 miles and climbed the equivalent of 181 floors as we traversed the path to Porter Mountain. One of the Adirondack High Peaks, this hike was more challenging than we expected due to the rocky terrain but the views were well worth the effort.
  • Even though we didn’t take a formal tour, we had a blast touring the hockey rink at the Lake Placid Olympic Center and riding the winter sports simulator which gave us the feeling of six different Olympic sports including the luge!
  • We rented a boat and spent three hours tubing and wake boarding on Lake Placid. We dreamed of owning one of the picturesque lake house, enjoyed some tubing thrills and Bo spent over an hour trying to teach Liz and I to wake board. We each got up for seconds before failing miserably.  We were amazed by the crystal, clear lake water as well as the perfect 70 degree water temperature!
  • We watched three separate college football games – Georgia Tech, Georgia and Notre Dame. While it would have been wonderful for all three teams to win, at least our two alma maters won! In case you’re wondering, my Notre Dame allegiance stems from my childhood, as my dad was born and raised in South Bend, Indiana.
  • We spent hours around the fire playing games, reading, sipping either wine or coffee and just chatting. Since it was only four of us, we were able to relax and have none of the pressures that sometime accompany larger, group trips.
