Yes, I know, you all are jealous of my amazing hair and outfit choices for this picture! I mean really, how could you not be? Who else sports air dried ponytail hair and a NYRR race tshirt that is two sizes too big at 8pm? For six more weeks, this is my daily wardrobe as I work from home four days a week in my current role!

But, enough babble and onto the amazing recipe! Bo and I have always been hesitant of Cooking Light recipes as they seldom have enough flavor. Last night when I was planning our weekly menu and grocery list, I decided to give CL another chance and peruse this month’s issue for inspiration. Bo had requested a fish dish tonight so I quickly flipped to one of Cooking Light’s best features- their index in the back that is sorted by dish and protein! I quickly found a recipe that combined plenty of herbs, a healthy pesto, and green beans! Tonight’s dish was grilled halibut with three pepper relish with haricots verts salad . I made on adjustment and used tilapia instead of halibut as I couldn’t stomach the price of halibut that didn’t look incredible. You can often substitute tilapia for any white fish in a recipe if you need to cut costs. But, make sure you adjust the cooking time as tilapia is thinner than most other white fish. Bo and I absolutely LOVED this recipe and would make it again in a heart beat. It wasn’t that difficult either though there was quite a bit of prep involved. But, from start to finish it took only an hour!

ENJOY!

Exhausted….

Our parents have always told us that we try to pack too much into one weekend. This weekend was no exception and in honor of Mother’s Day we’ll both admit that “Mom, you’re right.” 🙂

I’m too exhausted to type out the details right now but here is a quick run down:
Friday- movers finished everything around 3:30pm, ran into Melissa on the elevator (!!!), finished unpacking a few boxes before Bo arrived home, explored LIC/Queens as we ventured to Best Buy to buy a new flat screen for the bedroom (see pics from Saturday am post), worked like mad people for from 7:30-9 organizing and unpacking, ordered dinner from SHI which was cheaper and better than the sushi we used to get in NYC, watched Rendition for an hour before falling asleep.
Saturday and Sunday- We went ALL over NYC yesterday exploring places such as ABC Capet, Carlyle Custom Sleepers, Pottery Barn, Crate and Barrel, Bed Bath and Beyond, Williams Sonoma, and more! We accomplished the following:

-Ran NYRR Mothers Day 4 mile race in Central Park together talking the whole way! I improved my time by 3 seconds since January which was dissapointing but they changed the course and we had some major hills!
-Ordered a custom sleeper sofa and overstuffed chair from Carlyle Custom Sofas which will arrive on May 23rd!
Malika Rug from Pottery Barn – originally $699 but marked down 40% since the Pottery Barn Bed and Bath is being renovated next month and they’re trying to move product

-2 yellow throw pillows for the bed from Pottery Barn
-4 awesome baskets for our “dead space” above the kitchen cabinets. These are already holding our rarely used kitchen items such as baking supplies and seasonal things.
-20 container store tupperwares that all match
-1 Crate and Barrel entertainment center
-1 huge Brita Water filter container for the fridge
-1 bread knife as our Wustoff one was lost by his old roommates
-blue and white striped shower curtain
-4 amazingly soft Ralph Lauren Blue towels and hand towels from Macys on super sale!
-1 set of 800 ct sheets in light yellow/tan
-coaxial cable/cable hider/etc to set up the living room tv and hide the ugly cables from Home Depot

A few wise words from Scarlett Johansson

Since we’ve been together, Scarlett Johansson has always topped Bo’s “list” (remember on Friends when Ross and Rachel each had a list?). In terms of looks, she’s pretty much my opposite. She normally is seen sporting gorgeous strawberry blonde locks, is 5’3, and has a true feminine build complete with curves and lucious lips. But, when it comes to her views on stars and weight loss we’re on the same wave length. This article, while quite short, speaks volumes and I highly suggest it. How refreshing is it to hear that even with all the personal trainers in the world getting in “spandex shape” is never easy.
