KathEat’s Staples for Summer

I couldn’t be more excited to feature Kath as today’s guest post while Bo and I are scuba diving through wrecks and reefs of Bermuda. Kath was the very first blogger I followed and discovered her blog when searching for a healthy recipe on Google. Since then, I’ve had the opportunity to spend time with her at Healthy Living Summit, BlogHer, and during her trip to New York City where I first met her over a year ago!

Even though Loco is busy playing on the king size bed in Bermuda, he hopes you enjoy Kath’s healthy summer staples!

Greetings from KERFland, where our three Bears are enjoying simple summer meals! School just ended and they just started their summer internships – Churton is working as a cashier! They’re also looking forward to another summer visit to Grammy Buzz’s this year!

Summer cooking attitudes are split in two:

1) Days when you have all the time in the world to cook a fun meal or bring a delicious side dish to a picnic to fill out a table of homemade foods

2) Days when you are having so much fun outside that you don’t want to spend any time in the kitchen

Here are a handful of my favorite recipes for summer that work well for both!

Green Quinoa Salad with Shrimp + Feta

I’ve made this salad a handful of times to take to summer picnics. It’s full of warm weather veggies plus tasty shrimp in a nice quinoa base. It’s easy to make and tastes even better when made in advance.

Kale Chips

OK, so these require turning on the oven, but they’re ready in 10 minutes and they make the perfect accompaniment to dogs and burgers. When you put all of your fill into a triple-decker burger, you want something light on the side. Kale chips provide volume and crunch for minimal calories and maximal nutrition.

Summer Herb Soup

This soup cooks itself in the crockpot and is fantastic with a generous sprinkle of goat cheese on top. Best of all, it uses those awesome summer vegetables like zucchini, tomatoes and squash.

Homemade Bean Burgers

One of my favorite recipes I’ve ever invented! I love these burgers because they come together in minutes using pantry staples. And unlike rare ground beef, you don’t have to worry about the internal temp – the ingredients are all cooked so you get to cook them as long as you want. They’re also very flexible in flavor profile – add any herbs or spices you like, or for a fun twist, add in some crunchy cooked bacon!

Hope the Healthy Happier Bears are having a blast in Bermuda! The KERF Bears are pretending their in the tropics here in Virginia by swinging from the trees!

Flashback Post: Diamond Derby Party 2010

 

A year ago, Bo and I were surviving the craziest week of our lives. We were moving into Manhattan and hosting a Derby housewarming party within the same week! That week included very little sleep, a few crazy arguments, and lots of laughs. Somehow, we managed to unpack every box, decorate, and even install our whole speaker system before Thursday night. We then spent Thursday night through Saturday afternoon cooking every hour that we weren’t at work. It was fun but it also taught us a lot about hosting a party.

  • Never underestimate the amount that your guests will drink. Last year, we went through 2 cases of beer, three liters of bourbon, liter of vodka, and a case of wine!  
  • If you’re going to serve food, make it very clear. Last year, many people ate before coming to our party and we were therefore left with a LOT of leftover food.
  • Try to finish using the stove and oven by the time guests arrive, especially if you have a small apartment. Last year we planned to cook the pies while the guests were here which meant our house was BURNING up!
  • Having a theme makes planning a party a lot easier! We had a blast looking up Derby themed recipes, decorations, and traditions last year. This year, we’re taking it to the next level by encouraging guests to get into character by wearing their best seersucker, bow ties, hats, or dresses.

Recipes

As you all know, Bo and I decided to host a Derby inspired housewarming party only one week after moving into our new apartment.

Most people, including our friends in this picture, thought we were crazy.

“You all are really having a housewarming one week after moving in?” “Isn’t that going to be too stressful?”

Looking back, the answer to all of these questions was a resounding YES. Bo and I added a great deal of pressure and stress to our life by planning a housewarming party one week after moving into a new apartment. This week was filled with late night trips to Crate and Barrel, rushing home during lunch breaks to meet delivery men, and then spending every spare moment at home decorating, hanging pictures, and organizing. On top of this, add the fact that Bo has a very intricate stereo system. Our move meant that all the wires had to be remounted, covered, and set up before we could even begin using our entertainment center. But, by 6pm last night we couldn’t stop smiling and were so thankful we’d sacrificed five days for the feeling of a home. The party went off without a hitch! At the height we had 26 people in apartment laughing, enjoying delicious Southern food, and drinking bourbon.

One of the best moments during the night was when Christie asked Bo to teach her how to open a bottle with a spatula. After showing her the technique Bo let Christie give it a try herself. After a few minutes of attempting to open it Christie gave up in annoyance and self defeat. At that moment Bo burst out laughing finally telling her that the Blue Moon is a twist top not a pop top. :)

It was a great opportunity to introduce work friends to our other friends. I was hesitant about inviting co-workers and even my manager to the party but I’m glad I did. It was a nice chance to relax with them outside the cubicles.

Dining Room/Bar Area

Friday evening I dropped into a local florist near my office after seeing their sign advertising half price Fridays. It turns out that every Friday at 5pm they start selling all live flowers for 50% off since they are closed during the weekend. I was able to snag a dozen red and yellow roses for $24! We found more at Whole Foods yesterday but they were definitely not as pretty as the florists.  We used these to decorate the apartment in keeping with the Derby Run for the Roses theme.

Our living room wall is quickly becoming one of my favorite areas. We have never displayed our pictures in a fun arrangement before and we love these frames from Crate and Barrel. They are inexpensive, simple yet quality, and come in three different finishes perfect for almost any home. We’ve already ordered two more to fill the space next to the TV. The entertainment center/bookshelf to the right was another great find from Crate and Barrel. We ordered a gorgeous entertainment center from Room and Board but when it arrived the finish was not right for our color scheme. This one was over $500 cheaper and does the job perfectly. The trick was searching for more than entertainment centers. This was listed as a bookshelf on Crate and Barrel’s website even though it has a bottom door area that is perfect for storing the DVD player and more.  Lesson learned: Think outside the box when looking for unique pieces.

We still need to find a kitchen rug, desk chair, and mount pictures above the desk. These items weren’t able to happen by this weekend but will definitely happen this month. Bo’s mother painted gorgeous watercolors for our rehearsal dinner table cards and we are going to have those framed and arrange them above the desk.

Friday evening the majority of apartment work which remained was wiring. This falls into Bo’s realm and therefore I knew it was time to focus on our Derby Housewarming menu. This would keep me occupied and out of Bo’s way for at least a few hours. My mom was a great sounding board and resource for the menu. She and I spent thirty minutes on the phone while skimming this month’sSouthern Living magazine for recipes and inspiration. The following is the menu we put together:

Everything on the menu except the Blue Smoke items were homemade within eighteen hours of the party. The menu was delicious yet simple enough that I could get all ingredients at the Morton Williams down the block, execute each one perfectly, and make use of my beloved KitchenAid stand mixer we received as a wedding gift. Over the next week I’ll share each recipe for the above items. I’ll begin today with a southern favorite and one of the most popular items last night, pimiento cheese.

Growing up in the South, many people bought pimiento cheese by the pint in the Piggly Wiggly each Sunday in preparation for the week’s lunches. My brother’s favorite sandwich was always pimiento cheese on Sunbeam white bread. Even though my mom and many other Southern friends recommended I make this for the party I feared everyone would look at it in horror and ask what it was. I contemplated nixing the idea all together until Bo persuaded me against it. “Go for it! People will love it.”

I used the recipe from this month’s Southern Living which was very simple yet had some helpful tips. They insisted that cheese quality was important as well as grating the cheese on the finest side of the box grater.

Southern Living’s Favorite Pimiento Cheese

Ingredients
  • 1 1/2  cups  mayonnaise, such as Hellman’s or Duke’s
  • 1  (4-oz.) jar diced pimiento, drained
  • 1  teaspoon  Worcestershire sauce
  • 1  teaspoon  finely grated onion
  • 1/4  teaspoon  ground red pepper
  • 1  cup  chopped pecans
  • 1  (8-oz.) block extra-sharp Cheddar cheese
  • 1  (8-oz.) block sharp Cheddar cheese
  • Celery sticks and assorted crackers
Preparation

Make the mayo mixture. In a large bowl, stir together mayonnaise, diced pimiento, Worcestershire sauce, grated onion, and ground red pepper until blended.

Toast the pecans. Toasting brings out the rich flavor of the nuts. Preheat your oven to 350°. Bake pecans in a single layer in a shallow pan 8 to 10 minutes or until toasted and fragrant, stirring halfway through. (Stirring helps to ensure even browning.)

Shred the cheese. Trust us–texture matters. Using the small side of a box grater, finely shred extra-sharp Cheddar cheese. Then use the large side of the grater to coarsely shred sharp Cheddar cheese. Fresh cheese makes a difference.

Stir and enjoy. Add pecans and shredded cheeses to mayo mixture, stirring until blended. You can store it in the refrigerator up to 1 week. Serve with celery sticks and assorted crackers.

Easy Party H’orderves for a Crowd

Happy Monday! Did you have a good day? I enjoyed a great start to my week today after sleeping more than 12 hours last night!  After our busy weekend we both needed the sleep! This weekend we were constantly going:

Friday night I baked the night away in comfy pjs

Saturday we spent the day cooking and prepping for our party

Saturday night we donned t tacky Christmas sweaters with our closest friends

I also enjoyed my 2nd Monday evening Core Fusion Cardio class. Braxton kicked our butts tonight with mountain climbers and squats. I was definitely dripping sweat by the end of tonight’s class and wanted nothing more than a home cooked meal.

Tonight’s dinner included leftover ham, grilled pineapple, and garlic gold topped steamed broccoli. It was so simple but so good!

Per the requests of many readers, I wanted to share the some of our easy party h’orderve recipes from Saturday night’s party. Each of these recipes works well with a crowd of 20-30 people.

Alcoholic Eggnog

Alcoholic Eggnog Ingredients

6 eggs
2 extra egg yolks
4 cups whole milk
3/4 cup heavy cream
1/2 cup plus 2 Tablespoons of sugar
1/4 teaspoon salt
1 Tablespoon vanilla extract
1/2 teaspoon grated nutmeg
1 cup bourbon

Alcoholic Eggnog Directions

Start by whisking the eggs, egg yolks, sugar, and salt in a large pan until well-blended. Keep on whisking while you slowly pour in the milk until it is completely mixed-in. Next, set the pan on your stove’s burner and turn it to the lowest possible setting. Continuously whisk ingredients for 25-30 minutes or until the mixture reaches 160°F and will coat the underside of a spoon.

Next, remove the mixture from heat and strain it into a large-sized bowl, making sure to get out any pieces of cooked egg. Now stir in the bourbon, vanilla, and nutmeg, and transfer your mixture to a covered dish. Refrigerate the mix for at least 4 hours before proceeding.

Finally, when you’re ready to serve your eggnog with alcohol, grab the heavy cream and whip it well. Now just fold in the chilled mix, pour, serve and enjoy!

Giada’s Cheese Stuffed Dates with Prosciutto

  • 1/4 cup (2 ounces) goat cheese, at room temperature
  • 1/4 cup (2 ounces) mascarpone cheese, a room temperature
  • 1/4 cup finely chopped fresh basil leaves
  • Kosher salt and freshly ground black pepper
  • 16 Medjool dates (12 ounces), pitted
  • 8 thin slices prosciutto, halved lengthwise

Special equipment: 16 toothpicks or cocktail picks

In a small bowl, mix together the cheeses and basil and season with salt and pepper, to taste.

Gently pull the dates apart and stuff with about 1/2 teaspoon of the cheese mixture. Close the dates around the filling. Wrap a piece of prosciutto around each date and secure with a toothpick.

Arrange the stuffed dates on a platter and serve.

Hot Seafood Dip

Serves 24

  • 1.25 lbs unpeeled, small shrimp
  • 2 Tbsp butter
  • 2 cups mayonnaise
  • 1 cup parmesan cheese, grated
  • 1/2 c chopped green onion
  • 2 jalapeno peppers
  • 2 Tbsp lemon juice
  • 3 drops hot sauce
  • 1 lb crab meat
  • 1/2 tsp salt

Directions

  • Peel shrimp, devein, and cook shrimp in butter in a medium skillet over medium high heat for 2 minutes, stirring constantly.
  • Drain and set aside.
  • Combine mayo and next 5 ingredients in a large bowl.
  • Add shrimp, crabmeat, and salt. Stir well.
  • Spoon into a greased 13×9 inch baking dish.
  • Bake, uncovered, at 375 for 25 minutes or until mixture is cooked thoroughly.
