Bienvenidos a Cozumel

We have safely arrived in Cozumel for four relaxing days with our best friends, Amy and Ryan.

Our agenda is simple: relax, explore, drink, eat, and repeat.

001  003 005 After a quick transport from the airport to our resort we were whisked into the lobby and greeted with a fresh hand towel, sweet alcohol filled cocktail, and a red carnation.  007 008

Other than our amazing friends who we haven’t seen in over a year, the best part of the trip thus far has been the room! This room is EXACTLY what we were hoping for and expected based on the room description!  009 010 011 012 013 014After catching up we spent an hour exploring the property, or lack thereof, and booked our spa appointments and scuba diving times for the next few days.

Overall, we’re still not accustomed to the all inclusive resort atmosphere but the weather made us forget that as we enjoyed a sunset swim.

010015This evening we’re off to Casa Mission for dinner, the most popular Mexican restaurant in Cozumel!

Home for the Holidays Virtual 10k Results and Winners

Bo and I are currently en route to Cozumel! I have received multiple emails about links to Virtual 10k stories and the results! Therefore, without further ado, I share this post! See you in Cozumel!

We are so  happy to report that the Home for the Holidays Virtual 10K was a big success!!  The three of us had a blast putting it together and participating in this race.  We had an even better time listening to all of your stories and checking out your fun holiday costumes.  We definitely want to make this an annual event and hope that all of you will participate.

In addition, we want to thank Aaron, Stephanie’s husband, for all his help on this Virtual 10K. He has spent hours making sure the technology behind the scenes and has gone flawless for this. We could not have done it without him!

You can check out the full album of holiday pictures here.  There are some really amazing and creative pictures and costumes.  We loved them all.  So glad people really got into the spirit and made some time to run for fun during the holiday weekend. We received a ton of stories from people.  People from over 40 states and multiple countries participated in the event and told us all about how they went out in the snow or heat, rain or shine to run this race (if you ran from a different country, we really appreciate you running & are so sorry we can’t enter you in the sweepstakes).  While some ran solo, others were able to find camaraderie with their friends, family, or even their pets.  For some this was your first virtual race or even better your first 10K.   Regardless of the conditions, we were so happy to have you join in the fun and congratulations on finishing the Home for the Holidays Virtual 10K.

My husband broke out the sidewalk chalk and constructed an actual start and finish line on the bike path behind our home.

It was snowing pretty hard the whole time but it was very beautiful. I’m pretty sure I was the only soul outside on the streets the entire time.

First off, I totally am thankful and grateful for being able to do this.  At this point in reclaiming my health I have only run as far as 4 miles.  Today I managed the full 10K, talking walking breaks where I needed them.

Fish and Grits

At least one night while we’re home in Savannah, Bo and his mom spend the day together grocery shopping and then designing and cooking a delicious and often very complicated meal.  Each trip is more fun than the next as we all sit around their kitchen cooking, laughing, and enjoying wine together.

This visit, the dish was their take on the famous Southern dish, shrimp and grits. Their Fish and Grits recipe combines multiple recipes from some of Mimi’s favorite cookbooks.

Below the photos I’ll provide you with the recipe, as given to me by them, with links to the other recipes or cookbooks where the recipes can be found. Due to copyright laws, I can’t cut and paste these recipes or type them out so hopefully you can put them together and create your own delicious fish and grits meal. 123

Also a little word to the wise that I learned last night, don’t add too much liquid to your grits or you’ll be stuck stirring for 30 minutes over a hot stove!

Make grits according to Susan Mason cookbook. Notes: When making grits only use real yellow grits and often it is recommended to use a mix of fish stock and water to increase flavor.

Use the Bouchon Cookbook’s recipe for the red snapper and fish stock.

Use the Sauce American recipe from Balthazar cookbook. 

Serve with greens on the side. If you are truly interested in making this recipe and want a clearer recipe, email me and I’ll have them translate it!
